It depends on the ingredients. Oats, spices, and freeze-dried fruit hold up the longest; milk powder and nut powders shorten the window. Every recipe lists its own range, and the Pantry System includes a shelf-life chart by ingredient.
No. Everything in the book uses ingredients you can buy. If you already own a freeze dryer, you can use your own fruit.
Overnight oats recipes are free everywhere, and almost all of them use fresh fruit and last about five days in the fridge. This book is built only on dry, shelf-stable ingredients, with the milk ratio, cost, and shelf life for each flavor in one place.
